Can my trade-in be used as a deposit?

Yes. The agreed trade-in value, less any finance still owing on that car, is applied to the new purchase exactly like a cash deposit. If the trade-in is worth more than what you owe, the difference reduces the amount financed; if it is worth less, the shortfall is added to the new agreement.
How much deposit is sensible?

Enough to make a real dent in the amount financed without draining your savings. Even a modest deposit reduces interest, and a larger one shortens the period of negative equity. Keep an emergency fund intact; a deposit that leaves you unable to absorb a surprise expense is too big.
Does a deposit improve my chance of approval?
